Exasperating Eggs

As much as we love our farm fresh eggs, there is a downside you may have noticed: they are impossible to peel. Boiled eggs for breakfast, egg salad, and salad nicoise are frustrating culinary experiences when you are dealing with fresh eggs. This problem isn’t limited to farm fresh eggs, but it is rare among the grocery store variety. Why, you ask? Farm FRESH eggs. Fresh eggs do not peel easily; older eggs do. So, the solution is to plan. If you want to put boiled eggs on the menu, mark a dozen or two for that purpose and save them in the fridge. Farm fresh eggs last 6 weeks or more in the refrigerator, but we’ve found that letting them sit for at least a week to ten days makes for easier peeling. We made these Spicy Southwestern Deviled Eggs yesterday…delish!
